To prepare the crispy coconut shrimp, start by gathering the following ingredients: 1/3 cup of all-purpose flour (or whole wheat), properly measured, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper. In a separate bowl, beat 2 large eggs and set them aside. Next, combine 3/4 cup of Panko bread crumbs with 1 cup of sweetened shredded coconut. The raw large shrimp, peeled and deveined with tails attached, should weigh approximately 1 pound. Lastly, for cooking, you can use either vegetable oil or coconut oil.
