Bite Size Chicken Parmesan Meatballs With Marinara Sauce

Yield: 30-36 small 1\” meatballs

2 pounds ground chicken
3/4 cup panko breadcrumbs (gluten free panko will work fine)
1/4 cup finely minced onion
2 tablespoons minced parsley
2 cloves garlic, minced
zest of 1 small lemon, about 1 teaspoon
2 eggs
3/4 cup shredded Pecorino Romano or Parmesan cheese
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

1 lemon, zested, juiced
1/2 c. hot sauce
1 box panko bread crumbs mixed with 1 tsp. black pepper, 1 tsp. creole seasoning

4 oz. Gorgonzola cheese
1/2 c. sharp cheddar

3 tablespoons olive oil, divided

1 small white onion, finely chopped
2 garlic cloves minced
1 1/2 pounds mixed mushrooms, wild are wonderful, but sliced cremini or white mushrooms will also work
Salt and freshly ground pepper
1/2 cup white wine or vermouth, or 1/4 cup sherry or marsala (optional)
1/2 cup vegetable or beef broth, plus a splash or two extra if needed
1/2 teaspoon chopped thyme
4 ounce-log soft goat cheese
1 tablespoon minced fresh chives or flat-leaf parsley, to finish
